Beef and Vermicelli Stir-fry

 

Ingredients

  • 500g Beef mince
  • 4 spring onions, chopped
  • 1 Tbls soy sauce
  • 2 cups (120g) fresh breadcrumb
  • 1 egg, lightly beaten
  • Oil for shallow frying

 

  • 100g dried vermicelli
  • 1 tbls oil
  • 1 tbls sesame oil
  • 1 large onion cut into 8ths
  • 1 large red capsicum, cut into strips
  • 2 cups sliced cabbage
  • 2 garlic cloves, crushed
  • 2 tsp grated ginger
  • 230g can sliced bamboo shoots, drained
  • 3 tsp cornflour
  • 1 ½ cups chicken stock
  • 1 tbls soy sauce
  • ¼ cup plum sauce

 

Method

 

  • Combine mince with spring onions, soy sauce, breadcrumbs and egg
  • Roll into balls and fry in pan
  • Place vermicelli in bowl, cover with hot water and stand for 10 min, drain
  • Heat oil and sesame oil in heavy based pan add onion and capsicum, stir fry for 2 min. Add cabbage, garlic and ginger, stir fry for 1 min.
  • Add bamboo shoots and meatballs, stir fry for 2 min
  • Add cornflour, blended with a little stock, remaining stock, soy sauce and plum sauce. Stir fry until vegi’s tender and meatballs heated. Add vermicelli and sir.
